Pumpkin Spice Cupcake
This is a lightly spiced and very moist pumpkin cake, topped with a maple "butter" cream. This cupcake just happens to be vegan!
Ingredients: Gluten Free flour blend (brown rice flour, white rice flour, tapioca flour, arrowroot starch, potato starch), Buttermilk, Evaporated Cane Juice, Brown Sugar, Orange Juice, Canola Oil, Applesauce, Pumpkin Puree, Ginger, Eggs, Orange Zest, Cinnamon, Baking Soda, Baking Powder, Xanthan gum, salt.
Frosting: Spectrum Shortening (Palm Oil), Powdered Sugar, Vanilla, Cinnamon, Nutmeg
Pumpkin Butter Filling: Pumpkin Puree, Apple Juice, Maple Syrup, Vanilla Extract, Pumpkin Pie Spice, Cinnamon, Kosher Salt
